Honest Conclusion
„Aarons Genusskrämerei is, for me, a really good example of just how exciting modern regional cuisine can be. High-quality regional produce meets creative ideas and Aaron's very own signature. I find the 'What the Hall' concept particularly fascinating: Hallein and its history become part of the cuisine, with the theme of salt resurfacing throughout the dishes. The atmosphere is a personal highlight of mine too — sitting outside in summer, it feels almost like being in Italy, right in the middle of Hallein's old town, with good food in front of you and a glass of wine to go with it. For me, one of the most exciting culinary addresses in Hallein — regional, creative, and wonderfully unpretentious."

About Aarons Genusskrämerei
Located in the heart of Hallein's historic old town, Aaron Priewasser's Genusskrämerei demonstrates just how exciting regional cuisine can be when tradition is interpreted with a fresh, modern perspective. His philosophy, 'What the Hall,' is a culinary tribute to Hallein, its history, and the bounty of the region. Salt plays a starring role here, appearing in diverse forms—from brine to fermentation—as a nod to the city's storied history with the mineral. For Aaron, locality and seasonality are more than just buzzwords; many ingredients are sourced from hand-picked SalzburgerLand producers, who are even credited by name on the menu. Vegetables, salads, and herbs are frequently sourced from their own partner garden. Guests can experience the cuisine in various ways: small plates for sharing, hearty main courses, the extensive 'What the Hall' tasting menu, or the popular Saturday tapas brunch featuring six small plates. Complementing the food is an exciting wine list and an ambiance that is as relaxed and unpretentious as the cooking. In the summer, the quiet courtyard tucked away in the old town is a truly enchanting spot.

Summer Table in the Courtyard
"My personal highlight at Aarons Genusskrämerei is the 'Summer Table in the Courtyard.' It is all about communal dining, sharing dishes, enjoying wine, and lingering long after the meal is over. A variety of plates are placed in the center of the table, bottles are left open, and the entire evening feels like a vacation. Especially in the courtyard, nestled within the charming old town of Hallein, it evokes a true Italian-style 'la dolce vita.' For me, this perfectly captures what Aarons Genusskrämerei stands for: great food, quality products, and having a wonderful time together. The Summer Table is hosted on select dates—we look forward to its return in 2027."
