I have one simple rule for burgers: if I cannot taste the meat, the finest sauce will not save it. I recommend three addresses here – two in the middle of Salzburg, one in Straßwalchen – and say why I name them.
Two burgers on Linzergasse
A good burger is decided before the sauce arrives. I want to taste meat with enough fat to stay juicy, a bun that does not fall apart, and vegetables that are fresh rather than decoratively arranged. Everything else is ornament.
Two of my favourites sit less than fifty metres apart on Linzergasse. Ludwig works with Austrian organic beef and organic alpine chicken – here the burger is not merely filling, it is actually well cooked. At Fifty 4 Burgers you get 100% halal meat, homemade sauces and a pace that suits a lunch break.

Natural Wine Dealers
Salzburg-Altstadt
Natural wine without the fuss: Rafael and Nina bring carefully selected wines from independent producers to Salzburg's Kaigasse. A relaxed bottle shop for discovering new favourites and enjoying good conversations.
View the placeWhat makes a good burger
A burger is decided before the sauce arrives. The meat needs enough fat to stay juicy and should still have colour inside; coarsely ground tastes of more than finely puréed. The bun has to carry: soft enough not to splinter, firm enough that the bottom half does not go soggy. A bun that falls apart on the first bite ruins the rest.
Balance matters more than the number of toppings. Lettuce and tomato bring water, cheese brings fat, sauce brings sweetness – pile all of it on thick and you taste nothing. Better to set two or three things deliberately: pickled onion for acidity, something sharp, something crunchy.
You can check it at the table: does the sauce run out the side? Is the meat still juicy inside? Does the bottom bun hold? And does it taste of beef, not just of smoke and sauce?
A trip to Straßwalchen
Anyone driving into the Flachgau anyway should stop here. Ben's Aloha is not a classic burger joint: there are bowls, brunch and burgers, bright and relaxed, with a garden where you stay longer than planned. The burger is no compromise – it is the reason I make the drive.
