How is a proper Wiener Schnitzel made and what are the ingredients?

A genuine Wiener Schnitzel uses veal (Kalb), though pork (Schwein) is a common everyday alternative. The cut is pounded thin, lightly salted, then dredged in flour, dipped in beaten egg, and coated in fresh breadcrumbs (Paniermehl) — never pressed on, so the coating stays airy. It's fried in plenty of clarified butter (Butterschmalz) at medium heat, swished gently so the crumb lifts and curls golden around the meat. Served with lemon wedge, parsley potatoes or potato salad, and lingonberry compote (Preiselbeeren).
